Apart from sunning yourself and kite surfing, there are a handful of things to do off the beach during a stay in Mui Ne. No cause for major excitement but they'll give you an excuse to take a break from the beach.
Mui Ne is a cycling destination waiting for decent bikes. You can rent very ordinary bikes that will allow you to visit most neighbouring sites. I couldn't find any good quality bikes however. That's a great shame since the roads are fairly cycle-friendly. There's great potential for cycling here.
