    A chat with Hoi An chef, Tran Duc

    When American Vietnamese chef Tran Duc arrived in Hoi An in 2004 to open his first restaurant, Mango Rooms, the heritage town's long tourism boom was just beginning. Like Hoi An, Duc's gone from strength to strength, with three restaurants serving his distinctive flavours and a recent opening in nearby Danang called Fat Fish. Last week we sat down for a chat with Duc about food and life in Hoi An.
