Staying in a local village for a night can be a great experience as can longer treks over the 2 or 3 nights to more remote areas.

Several Hanoi and Sapa based tour operators offer treks that include an overnight stay in a minority village. Like most things in Sapa, you can select the degree of difficulty that suits. 

These are a great way to get a closer look at village life and get away from the more touristy spots. Longer 2, 3 and 4 night treks are also popular and use local villages throughout for accommodation.
